Last week we celebrated Mr. A Southern Soul’s birthday! We had lots of fun enjoying a dinner of his favorite foods and laughed a lot at the funny cards the boys and I picked out for him. Soon, it was time to break out in song, light a few candles and present the cake.
Well, I did make a homemade cake but of course, I broke tradition and did not bake up a layer cake with loads of icing. Truth be told, I’m not much of a cake person and really don’t like icing. I know, it’s not my birthday, so I should get over it.
The great thing is, Big Sweetie is such a great guy, loves my cooking and did not mind one bit that I came up with a little something new to celebrate his day. This year, I chose spice cake and he LOVED IT! It turned out great and was so pretty from the swirl design thanks to my new Nordic Ware pan. Who needs icing when you can have all this goodness, right?
