midweek meal #2

This week on Midweek Menu it’s all about comfort food. We’ve got some bone chilling temperatures here this week and when my family hits the door at the end of the day, they want supper time to feel like a a “second” big hug. The first one coming from me, of course! I’ve also put the menu together with recipes that have some easy prep. Here’s the run down, just click on the recipe name and you’ll go to the full recipe –

Main Dish – Hamburger Steak with Mushrooms & Onions

  • Pat out the burgers and chop the mushrooms and onions. Line your sheet pan with foil, place the hamburger steak and veggies on and cover with plastic wrap. Store in fridge until time to cook.

Side Dish – Stuffed Baked Potato

  • This dish can be make ahead of time. Do everything except topping the potatoes with cheese. Before serving, reheat potatoes then sprinkle with cheese and heat until melted.

Dessert – Strawberry Thumbprint Cookies

  • Make ahead dessert. Dough can be made ahead and frozen until time of use.

Using all of these tips and make ahead strategies really does insure success at supper time. Also, make sure you are keeping track of the recipes your family enjoys. By having a “go-to” list of dishes that everyone likes is so much easier when your schedule is packed and you don’t have the time or desire to get creative.
