I am so glad to be back with an all new Midweek Menu. After taking a break during the holidays, I really do enjoy being back on a regular schedule. Do you? I also love getting back to working in my planner and scheduling what’s happening with the family. Of course, that includes meal planning. After all that delicious food over the holidays, my waistline needs me get back into planning out my meals and snacks as well!
This weeks menu has four recipes that go together perfectly. They have sweet and savory flavors that compliment each other all while being easy to make. The star of the line up is pork tenderloin. Even though the recipe calls for it to be grilled, I make this in the oven during cooler months and it turns out beautifully. Applesauce is just one of those recipes that goes well with pork, so of course, I had to include it. It’s a great, make ahead dish that uses the crock pot, so what’s not to love? Sheet pan roasted brussel sprouts is a side dish recipe that’s on constant rotation in my house. Roasting brings out such amazing flavor and the crispy, outer leaves of the sprouts are always fought over. I’m also including a three ingredient, fruit dip that can be enjoyed at the start of the meal or as dessert. Let’s get 2019 off to a good start!
