Every week, when I put together my menu plan, I make sure I’m not just combining recipes with flavors that compliment each other but also ones that don’t require lots of cooking time. With all the recipes I’ve collected over the years, I could spend hours in the kitchen making a meal for the family. That is not my goal. I want to make great meals that everyone around the table will enjoy and I want to do the same. So, if you’ve ever been overwhelmed about putting together a great menu for supper, don’t worry…every week, Midweek Menu is here to help.

Midweek Menu #53 combines four tried and true recipes that are special on their own but when put together, make an outstanding meal. To pull it all together, make the Cranberry Salad the day before you want to serve it. I actually gets better when the ingredients have time to hang out together. Roast the potatoes for the Pesto Potato Salad and make the the dressing. Right before serving, toss the potatoes in the herbs, dressing and cheese. The Peach Sauce and Angel Food Cake are also recipes that can be made the night before. All that’s left to do it roast the Lemon Chicken. This is one great menu for serving any night of the week and is special enough for when you’re having folks over for supper.
