Here at the Southern Soul home, we are easing into summer. It’s been a busy spring with Hunter’s graduation and other events but we have decided that it’s high time to kick back and enjoy the longer days. During the week, when I’m working, I really want to serve up food that I know my family will like. That’s where these four recipes come in. I have served them time and time again and they are always a hit. Each one of them can also be made ahead of time so when Wednesday rolls around, I know I’ve got everything I need and can get supper served in about 15 minutes. Now, I don’t know about you but you can’t even get “fast food” these days in 15 minutes! It really is easy to get a home cooked meal on the table when you do a bit of planning and prep.
