The weather is nasty and I’ve been feeling a little peaked all day.  We’ve stayed warm and cozy here but of course, sometime around 3:00 the boys started asking what we were gonna have for dinner.  Tonight, it’s gonna be easy and the menu is one of their all time favorites… Night Breakfast!  That’s what my oldest son named breakfast for dinner when he was little and I just love that name.  So, here’s my version along with a few helpful tips and yummy recipes.

Whisk, whisk, whisk then cook low and slow for the perfect scrambled eggs.

I cook my bacon in the oven on a sheet tray, lined with tin foil. Place bacon on a wire rack and cook at 425 degrees until crispy.
Last but not least, waffles.  Here’s my recipe for light, delicious waffles.
Add some warm syrup, a cold glass of milk and you’ve got one great dinner.
