This cauliflower crust pizza is crispy, cheesy and full of all the traditional flavors you love from your favorite pizza parlor. I know it seems strange that you can turn a vegetable into pizza crust but trust me, you absolutely can and it’s amazing!
You might have noticed recently, that recipes featuring “cauliflower pizzas” have flooded the internet. I’ve seen them on sites from many of my blogger friends and finally decided to give in and try my hand at making one. I knew I’d probably like it since I really don’t have any issues with that big ol’ white veggie but there would be others here that would take offense to me messing with their favorite pizza ingredients.
There were several reasons I wanted to try making crust out of cauliflower. The first and foremost is the health benefit. Mr. A Southern Soul and I are working hard at keeping our carb count low. We are neither one cutting them out all together, we’re just watching what we eat and when possible, substituting healthier choices, like this cauliflower crust.
One of the things I knew for sure regarding this recipe is that I was not going to give up one bite of delicious flavor. My goal was to infuse the somewhat bland taste of cauliflower with herbs, garlic and cheese. After a couple of tries, I came up with just the right mix of 2 kinds of cheese, 2 different dried herbs, an egg and a few other ingredients.The next key to success for this crust is to make sure you have the right texture from the cauliflower. I found “riced” cauliflower in the frozen section of the grocery store but you can make it just as easily by using a food processor. Either way, the crust will turn our great if you have pretty fine texture (rice) to work with. The trick to getting a thin, even crust is once you put the mixed ingredients on the sheet pan lined with parchment, use a second piece of parchment to press out the “dough” to form a circle or oval that is thin and even.Once my crust came together, it was time to build my pizza. At this point, I knew if this was to be a successful dish that everyone would like, I needed to stick to the basics. I spooned on tomato sauce with just a little garlic and basil added, then sprinkled on mozzarella cheese, layered on slices of pepperoni, lastly, sprinkling on grated Parmesan. I popped my masterpiece into the oven, said a little prayer and waited for the timer to go off.After about 15 short minutes, out came a beautiful pizza with a crust that had crispy edges, loaded with melted cheese. Honestly, I was shocked at how it incredible it looked! Once I gathered myself and after letting the pizza rest a few minutes, it was time for slicing. I grabbed my pizza cutter and went to town. Since I’d pressed out my crust in an oval, I cut my pizza into rectangles…it was just easier that way. All that remained was the tasting. I nervously called the family to the kitchen and declared, dinner served. I got a few sideways glances and a couple of questions but amazingly, because this dish looked so extraordinary, they dove right in. In minutes, the whole pizza was gone. My nervousness disappeared as I soaked up all the smiles and compliments. Then, in no time, I was back at it…they asked for a second round. This time, I guess you can believe what you read on the internet!
Cauliflower Crust Pizza
- 1 head cauliflower - riced (about 2 cups)
- 1 egg
- 1/3 cup mozzarella cheese - grated
- 3 tablespoons Parmesan cheese - grated
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- pinch red pepper flakes
- 1/4 cup tomato sauce
- Heat oven to 425 degrees.
- Place cauliflower in a microwave safe bowl, cover and cook for 3 minutes. Once cooked, uncover bowl and let cauliflower cool for 3 - 5 minutes. Using paper towels, wring out any liquid from cooked cauliflower. Place back in bowl and add all addition ingredients.
- Mix ingredients together until well blended. Spoon cauliflower "crust" into middle of a baking pan lined with parchment. Using a second sheet of parchment press crust into a circle/oval until thin and even.
- Spoon on tomato sauce, layer with mozzarella cheese, pepperoni slices and sprinkle with Parmesan cheese. Place in oven and bake for approximately 15 minutes until edges of pizza are golden and cheese is melted.
- Remove from oven and let cool for 5 minutes. Sprinkle on additional Parmesan cheese and red pepper flakes.
