I have to admit, from the first of October through New Year’s Day, life can be pretty stressful. To go with my guilt free, cold brew tea, I love to serve fresh veggies with some sort of homemade dip. My new favorite obsession is Onion. It’s a retro recipe that’s super easy to make and has a rich flavor that comes from caramelized onions. The combination of cool veggies and the creamy dip is a great combination. This is easy snacking that helps take the pressure off of what can be a hectic time of year.

Onion Dip

Ingredients

  • 1 tablespoon olive oil
  • 1 ½ tablespoon butter
  • 1 pound onions - sliced very thin
  • 1 ½ cup sour cream
  • ¾ cup mayonnaise
  • ¼ teaspoon garlic power
  • ¼ teaspoon salt
  • chopped chives for garnish

Instructions

  • Heat olive oil and butter in a skillet. Add onions and cook until translucent. Remove from pan and let cool. Mix cooled onions, sour cream, mayonnaise, garlic powder and salt in a bowl. Chill. 
  • Spoon into serving bowl, top with chives and serve with fresh vegetables.
