I know meal planning can be a beast and that’s why I created Midweek Menu. With so many things pulling at us during the day, it’s easy to get overwhelmed when it coming to making supper.
But hold on, you CAN do this. Making a meal that’s delicious, healthy, and easy is possible! With a few minutes of planning, a little meal prep, and just a bit of cooking, you’ll pull together an outstanding meal that your loved ones will rave about.
This week the menu is FULL of all the best that summer has to offer. Fresh herbs are turned into an incredible dressing that can double as a dip. Sweet corn is turned into chowder and tender lettuce makes a yummy salad.
I’ve added a bit of fun into the mix with English Muffin pizzas. Let your family choose their favorite toppings then bake the pizzas until hot and bubbly. Last but not least, no-churn ice cream is loaded with juicy peaches for the perfect ending to a great meal. Let’s get cooking!
