This week we are going light and easy with a menu that’s full of healthy delicious recipes! Homemade soup, chips, an amazing salad along with a special drink is what’s happening on Midweek Menu #117.
If you over did it a wee bite last week like I did, then I know you are looking for a way to lighten things up at meal time. Now, I don’t regret that second piece of pecan pie I ate for one second, but, it’s time to get back on a better, healthier way of eating. This week’s menu helps us do just that.
The star of the menu is Amazing Roasted Cabbage Soup. It’s full of veggies and even those who are not fans of cabbage love this soup. Roasted brings out incredible flavors from the cabbage and gives the broth a rich, deep taste. I’ve added in a spinach salad with shrimp, homemade pita chips and a fall drink to round things out.
