Some of my family’s best times have been spent at the supper table enjoying each other and good food. There’s something magical that happens when everyone is gathered together, sharing a meal, laughter, and stories about their day.
This week, this Midweek Menu #125 has 4 recipes that are great on their own but when they are served together, turn into an incredible meal.
Tips For Making This Menu
- Prep the Mexican Shredded Beef the night before and store it in the fridge. Place the slow cooker insert into the electric cooker and let it work its magic.
- I like to slice the veggies for the Tomato Cucumber Salad and make the dressing in advance. I store everything in the fridge and toss all the ingredients together right before serving.
- The Peach Tart can also be made ahead of time and served at room temperature or warmed up when you’re ready to enjoy it.
- If you are lucky enough to have leftovers, the beef and rice freeze beautifully!
