You’ll have no problem getting folks to the dinner table with this family-friendly meal! With a little help from the crockpot and an instant pot, these easy recipes make cooking delicious food for your family a joy.

Midweek Menu #125 marks a milestone. Over 124 weeks I’ve shared recipes, cooking tips, and a single weekly menu meant to encourage you to be a better home cook. I am thrilled that so many people have embraced this humble idea!

Some of my family’s best times have been spent at the supper table enjoying each other and good food. There’s something magical that happens when everyone is gathered together, sharing a meal, laughter, and stories about their day.

This week, this Midweek Menu #125 has 4 recipes that are great on their own but when they are served together, turn into an incredible meal.

Tips For Making This Menu

  • Prep the Mexican Shredded Beef the night before and store it in the fridge. Place the slow cooker insert into the electric cooker and let it work its magic.
  • I like to slice the veggies for the Tomato Cucumber Salad and make the dressing in advance. I store everything in the fridge and toss all the ingredients together right before serving.
  • The Peach Tart can also be made ahead of time and served at room temperature or warmed up when you’re ready to enjoy it.
  • If you are lucky enough to have leftovers, the beef and rice freeze beautifully!
