This week has been a challenge for almost everyone I know. The cause for all the consternation? Weather. From freezing temps to snow and ice, most of us are dealing with some sort of “thing.”
To help me and mine deal with things, I’ve planned a delicious meal with some of our favorite foods. This week’s MM is all about comfort food that’s not only good for our bodies but our souls as well.
The star of the show is Crock Pot Lemon Chicken. I like to double the recipe and use the leftovers in chicken salad. For this meal, I serve the chicken and a little bit of the sauce over Parmesan Noodles made in the Instant Pot. It’s a marriage made in heaven! I’ve added classic Southern Green Beans (but they’re not cooked for 40 hours) as a side dish and we’re finishing strong with Chocolate Oreo Balls.
This meal proves that even in not so fun times, being with the people you love and sharing a meal can be just the thing you need the most.
