Happy Wednesday, friend! I am hard at work today with new recipe creations, writing, photographing, and a big new project that will launch this summer. I’ve also been tackling a few projects around the house.
With so many “plates spinning” I’ve found myself not being as good as I should when it comes to making dinner. I’ve neglected planning out at least a couple of meals for me and Mr. SS and it’s actually made me a bit frustrated.
But, today, I’m solving that problem. I’ve put together a menu that has something fresh, a favorite main dish, a super easy side dish, and a little something sweet.
What Makes Midweek Menu #136 Special?
- The Green Bean Salad is packed with fresh flavors. It can be made ahead of time and actually gets better when it chills in the fridge. It also makes a great lunch salad with the addition of leftover chicken or tuna.
- Meatloaf made in a muffin tin is a genius hack for portion control! These little meatloaves also freeze beautifully so you can enjoy one when you need a quick dinner.
- Potato Wedges are a nod to everyone’s favorite french fries. And since they are made in the air fryer, with very little oil, you don’t have to feel guilty about having them.
- For a sweet finish, this Chocolate Chip Banana Bread is a perfect treat. I make a whole loaf, slice it in half and freeze for a later date. This quick bread is so yummy for breakfast or toasted with a smear of cream cheese for a snack.
