This week’s menu has an easy, full flavored main dish, a healthy veggie, a super easy, fresh salad and a decadent dessert. With Easter in the rear view mirror, I decided we needed to lighten up a bit along with pulling together super easy-to-make dishes. I always feel that when the spring holidays are over that time moves at warp speed, especially if you have kids. Mr. A Southern Soul and I had a conversation about this over the weekend. We were lamenting on how it feels like we were just celebrating the new year and BAM…here were are in the first week of April! Oh, well, there’s nothing we can do about time, so, let’s move on, right? I am looking forward to cooking on the grill, sitting outside with a cool beverage and enjoying warm temperatures. For now, it’s time to get a great dinner on the table!
