The star of this week’s Midweek Menu is my Easy Homemade Meatballs, made with a mouthwatering secret ingredient! Served with Instant Pot Garlic Parmesan Noodles, fresh Tomato Relish, and a Creamy Fruit Dip, you can have a delicious dinner on the table in less than 45 minutes!

Do you ever really crave some good comfort food, but you don’t want to put in the effort? This menu is my solution! It’s one of those dinners that seems like it’d take hours to make, but each recipe has a shortcut, making it easy to cook in 45 minutes.

I love this combination of recipes because it’s somehow both hearty comfort food, and light, so you’re not too stuffed afterward.

All the flavors of this menu blend perfectly, starting with the Fresh Tomato Relish, which I like to serve with Cream Cheese. Homemade Meatballs are filling, perfectly seasoned, juicy, and great to freeze if you want to make them ahead of time.

Of course, you need pasta to go with your meatballs. Flavorful, and easy-to-make thanks to the Instant Pot, these noodles are sure to make even the pickiest eater happy. Then for dessert, you can serve a delightful, Creamy 3-Ingredients Fruit Dip that’s ready to serve in under 10 minutes!
