Midweek Menu 166 (Cranberry Pecan Chicken Salad)

Weeknight dinners can be made stress-free by using a menu plan; with all the recipes in one place! On this week’s menu, we have a delicious chicken salad, flavorful tomato soup, homemade croutons, and an absolutely irresistible cookie recipe!

I love this menu for so many reasons, but the main reason is the leftovers. Since all these recipes are easy to store and reheat, they make amazing leftovers.

Cranberry Pecan Chicken Salad is flavorful and easy to make in 15 minutes, plus it can be served in a variety of ways. You can serve it with crackers as an appetizer for dinner, or make sandwiches to serve with your tomato soup, and then just pack the leftovers for lunch the next day.

Roasted Garlic Tomato Soup is a warm, comforting favorite in my house, especially during the winter. This soup is easy to make in about an hour, and even easier to reheat the next day for lunch or dinner.

Of course, you’ve got to have a topping for your soup, and this recipe makes the BEST Homemade Croutons that come out perfectly every time! Add in an easy-to-make cookie recipe, and you’ve got the perfect family meal.
