Midweek Menu 175 has easy-to-make dinner recipes that perfectly combine delicious, spring flavors and ‘hands-free’ cooking! With a slow-cooked main dish, a simple Instant Pot recipe, a 15-minute side dish plus a make-ahead dessert, you’ll have an irresistible weeknight meal on the table in no time!

If I had to pick any meal to make over and over again, this is one of them! Every aspect of this dinner is fabulous; the flavors compliment each other wonderfully, and two of these recipes don’t require any hands-on cooking.
When I make this meal, I like to bake the Piña Colada Bundt Cake ahead of time. Usually, I’ll bake it on Sunday when I have time, then it can be enjoyed for dessert throughout the week! On the day you choose to serve this menu, I would recommend getting the ribs into the Crock-Pot that morning since they slow cook for 8 hours.
About 30 minutes before you want to serve dinner, begin to prepare your Instant Pot Coconut Lime Rice. It takes 20 minutes to pressure-cook, but you won’t have to stand there babysitting the stove.
Then, once your rice is already cooking, you can move on to the Honey Glazed Carrots. After about 15 minutes, the carrots will be finished and your whole delicious meal will be ready to serve to loved ones!
