Midweek Menu 186 is all about fast, delicious make-ahead recipes! Whether you’re going camping, or you’re in need of a simple meal, you’re in the right place. All of these dishes can be made or prepared ahead of time. They’re easy to pack up for lunches, and the dessert can double as breakfast the next day!
This menu is meant for you to make at your own pace! This means you can prepare each recipe whenever you have time, then store it until you’re ready to serve. Three of the recipes can be made entirely ahead of time. The fourth can be prepared ahead of time, so all you’ll have to do is cook it!
I designed this menu for a camping trip a couple of years ago, but I quickly realized it’s a great meal for busy weeks. You can cook the Hamburger Hobo Dinner Foil Packs over a campfire or in the oven. It’s an easy recipe to prep in advance, and as a bonus, clean-up is virtually nonexistent.
You can make my quick and easy Beer Bread recipe in under an hour, using just six simple ingredients! Beer Bread is super versatile, so I recommend making it at the beginning of the week and then serving it with 2 or 3 different dinners. Similarly, my fruit salad recipe can feed a crowd, so make a big batch that you can serve for breakfasts, dinners, and snacks throughout the week!
In my opinion, the star of this menu is the Glazed Orange Muffins; they taste like a burst of sunshine with each bite! These scratch-made muffins are ideal for serving as a healthy dessert, and then they can double as breakfast or an afternoon snack.
