I am so thankful we are back on our regular schedule after a weekend of uncertainty, thanks to hurricane Florence. I’m grateful our home didn’t suffer any damage and that I can get in the kitchen and cook for my family. Sometimes, when you go through stressful times, you just need some TLC and for my family, that comes in the form of a home cooked meal. That’s what’s happening with this week’s Midweek Menu. This slow cooker soup is like a bowl full of comfort and along with an easy to make side dish, warm bread and a super quick dessert, well, I’ve sent a message to my family that all is well in our little part of the world.

This soup freezes beautifully. I serve it with a little cheese on top and a dash of hot sauce.
Chop the broccoli the night before so that it’s ready to place on the sheet pan to roast.
Mix all ingredients together while the broccoli and bread is cooking. Macaroons can cook while you enjoy dinner.
