This week’s menu showcases oven roasted chicken, an easy tomato sauce with tender pasta, a fresh salad with homemade croutons and chocolate, no-bake cookies!
I am so tickled about this week’s menu. Yes, I do get excited about food especially when the combination of flavors from the recipes fit perfectly together. That’s what we’ve got right here! I have served this menu over and over to my family and friends. I’ve used it for entertaining and to feed a crowd. The also I love about this line up because every thing can be made in advance. See…that’s another one of the exciting parts of this menu. You can roast the chicken ahead of time, actually a couple of days before you want to serve it. Just keep it in the fridge and the reheat in the oven. I also make the sauce along with the polenta croutons for the salad the day before serving. You can save yourself some more time if you pick up a “bag salad” from the grocery and just add the cheese and berries before it hits the table. Last but not least, the no-bake cookies are a winner every time they hit the table. Again, make them the day before, but you might want to hide them cause they disappear quickly. There ya have it…one of my all time favorite menus that gets me excited every time I make it!
