Creamy corn chowder, pizza crescent bites, fresh salad and maple ice cream cake is what’s on the menu this week!
The menu this week is all about happy food. Yep, happy food. If you’re like me, by the time Wednesday rolls around, you’re just kinda over being so serious about things. For me, I’m normally focused on my to-do list, work, making sure the house is running smoothly, chores and other things that try to hijack my day. So, I always try to insert some humor and fun into the week and believe it or not, food can help.
I’ve put together four, great recipes that are so stinking easy to make! The corn chowder can be made with fresh or frozen corn plus it’s actually better when you make it a day ahead. Whenever I make something with crescent rolls, the gang comes running, and when they’re combined with the flavors of pizza, well, you know that’s a winning combination. Add in a fresh salad that you can make from ingredients at the grocery salad bar and a make ahead dessert that’s sweet, creamy and crunchy, well…life is good!

“Salad Bar” Salad with Blueberry Vinaigrette
Grab a head of lettuce then head to the salad bar at your grocery store to load up on all your favorite ingredients. You get to personalize your salad with all the waste of buying full size containers of toppings. Just add the homemade dressing for an incredible salad!
