Roast beef and cheese sandwiches, fried squash “chips” with a spicy dipping sauce and a no-bake, coconut dessert is what’s on the menu this week!
Over the years, I’ve tried to build a list of easy to make recipes that will get me out of trouble when it comes to getting a meal on the table. Years ago, as a working Mom, who traveled every week, I had to be super creative with my meal planning. I always had a couple of meals in the freezer and a few, really yummy make ahead dishes that could be reheated when it was suppertime. I also got really good at coming up with recipes for food that you could use in more than one way. You know, like roast beef. When I make a roast in my crock pot, I always make sure to cook a piece of beef that will feed the family for more than one meal. That way, we can have sandwiches, nachos or snacks the next day. That’s where this week’s menu comes in. Three of the dishes, the roast beef sandwiches, spicy mayo sauce and coconut cream pie in a jar can all be made ahead of time. I think that’s a menu that pleases everyone, especially the cook!
