This weeks menu is made up of simple recipes that when put together create a meal that’s special. All four dishes are easy to make and all but one can be made ahead of time. The main dish, Braised Chicken Thighs is an incredible recipe that you can make a day ahead of time, keep in the fridge then heat up before serving. This is one of those “old school” recipes that is actually better the second day since the flavors have had time to really develop. I decided that my Twice Baked Potato Casserole would be just the thing to serve along side the chicken because it will soak up that yummy sauce. Roasted Asparagus is a great veggie to serve along side the other two dishes since it’s a little lighter and has a bright citrus flavor from fresh lemons. Last but not least, make ahead Chocolate Cookies are a terrific little bite to finish off the meal. This is one beautiful menu using simple dishes that can turn an average weeknight into something special
