Four, family favorite recipes are on the menu this week! Personalized English muffin pizzas, roasted carrots, a fresh salad and oatmeal cookies are easy to make dishes perfect for a busy week night meal.
The hustle of Thanksgiving is over and we’ve settled back into our weekly routine. School is in session and Mr. A Southern Soul and I are working hard to finish up 2018, strong. I love this time of year because I wake up everyday just a wee bit excited over the holiday season. I’m in full decorating mode and have started my holiday baking. Even though I’m all giddy about Christmas and the start of a new year, I still have to make sure my crew is happy and fed every night. So, I pulled together this week’s menu from my “family favorite dishes” list because they are sure fire winners!
Personalized English muffin pizzas are so much fun to make. I set up an “assembly line” loaded with cheeses, meats and other toppings and let everyone make their own special version. While that’s happening, I roast carrots with honey and lemon for a delicious, sweet and savory side dish. The wedge salad with blue cheese and fresh peaches is made the night before and just hanging out in the fridge until it’s time for supper. Last but not least, when the pizzas come out of the oven, I pop my sheet pans in that are loaded with oatmeal cookie dough that I’d made the night before. Heat the oven up once, cook three recipes and serve a fresh, pre-made salad. That’s smart meal planning in my book!
