Welcome to 2018, everyone! I don’t know about you but the past year went by fast…really, really fast. Now that we are here at the start of a fresh, new year, I am dreaming, scheming, plotting and planning out the days to come. I always love getting my new planner and filling it with ideas I have for me and my family. Of course, those plans always include what I’m going to do about meals. I’ve made it a goal this year to be more intentional about my menu planning. Let’s start off the year with a tasty lineup of recipes that are sure to become family favorites. This menu is easy to make since the crock pot is used for the main dish. The side dish is prepared using probably my all time favorite cooking method – oven roasting. Last but not least, a salad that’s uncomplicated yet full of fresh flavor. We are taking a break from desserts this week…gotta get those holiday pounds off!
