This week’s menu has four great recipes and three of them can be made the day before you want to enjoy them. I need this kind line up myself because I’m scrambling. Over the weekend we got hit HARD with over 11 inches of snow. Now, here we are on Wednesday and the roads are still in pretty rough shape and school continues to be cancelled. Although these things are somewhat hard to deal with, I’m not complaining one single bit. We did not lose power, my home is nice and warm and my family is safe. My heart if full of gratefulness to all the workers who’ve been taking care of our city. I am counting my blessings and the list is mighty long.
I pulled together this menu for one main reason. Most every dish can be made a day ahead of time. Each one can also be doubled so that you can feed more than four people or have enough for lunch the next day. So, let’s get to cooking!
