Ever since I was a little girl, I’ve loved the combination of soup and salad. My mom often served homemade soup with her version of a chefs salad. I loved every bite of those dishes and enjoying them together now, brings back sweet memories.
I’ve take inspiration from those memories and put together a new twist on the traditional “soup and salad” combination. My version of Tomato Soup is creamy and light. It’s made with roasted tomatoes, garlic and onions for rich, deep flavor. I’ve combined it with my Italian Pasta Salad that has quickly become a fan favorite at A Southern Soul. It’s loaded with meat, cheese and olives along with tender pasta all tossed in a bright, fresh dressing. To add a little crunch to the menu, Parmesan Cheese Crisps are made in less than 20 minutes and are totally addictive. Try not to eat them all before you serve the meal! Last but not least, Vanishing Oatmeal Cookies totally live up to their name. They disappear so quickly, that I always make a double batch. So, here’s a menu that’s easy to make and is sure to help you make great memories around your own supper table.
