This week’s menu has four easy to make recipes that are sure to become family favorites. An amazing soup, a simple veggie dish, along with a new twist on tater tots and homemade cake come together for a dinner that will put a smile on everyone’s face!
Have you ever had one of those weeks where things just didn’t seem to come together? You, know, those few days where you just couldn’t get your groove on? Well, that’s what’s been happening around here. Mostly, because everyone in the family has been fighting some sort of germ invasion that’s been trying to take us down. We’ve been diligent about washing our hands, keeping things clean and taking our vitamins. We’ve also been making sure we get enough sleep and that we eat right. Even with all the “good things” we’ve been doing, we’ve still felt a bit under the weather so, I decided we needed a special meal to give us all “the feels” and put us in a happy place.
I chose four recipes that have a combination of healthy ingredients along with a bit of decadence thrown in. Amazing cabbage soup and roasted asparagus are great dishes to give us added vitamins in every single bite. Then, I picked loaded tater tots since they’re a fun addition to the menu and bring all the flavors of a loaded baked potato. The finale is a nice slice of spice cake that’s full of warm flavors that just make you feel all cozy inside. Staying healthy this time of year doesn’t mean we have to deny ourselves of the good things in life and this menu proves it!
