This Week’s Menu and Meal Prep
Bloody Mary Chili: make on the stove top in less than 45 minutes or in the slow cooker. The recipe makes enough for four people along with leftovers for the next day. It also freezes well for a make ahead meal.
Cheddar Cheese Biscuits: these biscuits can be made ahead of time and reheated before serving. I often make a double batch to have on hand for suppertime and breakfast.
Roasted Green Beans: I prep my green beans by washing and blanching them as soon as I get home from the store. I keep them in the fridge until I’m ready to roast them with a little butter, salt and pepper for a great, fresh side dish.
Fried Cherry Pies: these “hand pies” are easy to make with the help of store bought pie crust. I use the refrigerated crust in a box (contains 2 pie crusts) so that my pies can be made in just a few minutes. Make before dinner to they can cool as you enjoy your meal.
