If you’re like me, you been waiting on this day for weeks! I know it’s not a good thing to “wish away the day” as my Mama used to say but honestly, I’ve had about enough of winter. The really funny thing is, we woke up this morning with 30 degrees registering on the thermometer on the official first day of spring. Who cares, though? I am just happy the the seasons are changing. The sun is shinning, the daffodils and Lenten roses are blooming, so it’s all good in my world!
I like to celebrate the “little things” in life so today, I’ve put together a menu that’s easy to make and brings out a few flavors of spring. This week, I’m giving a breakdown on how to pull the whole menu together. All you have to do is follow along, then click on the recipe title to get the ingredient list and cooking instruction. Midweek Menu #41 Recipes
- Prep the chicken in the morning by putting it on a sheet pan and sprinkle on the seasoning. Pop it in the oven when you’re ready to cook supper.
- This recipe was first made on the grill on the side burner but just cook on the stove top in your kitchen. This is a great dish to make the day before and double if you’re a mushroom lover. Just warm them up and spoon over the chicken breasts.
- Even though I originally made this recipe on the grill it’s easy to do inside using a cast iron skillet. Prep the potatoes the night or morning before you want to serve and then add the peas so they stay nice and crisp.
- Make this cake the night before you want to serve it. It’s easy to pull together since you start with a box cake mix. Keep it in the fridge and top with whipped cream before serving.
