When it comes to uncomplicated, good food, I don’t think you can do any better than pot roast. I have several different versions of this classic dish and my family goes crazy when I say it’s “what’s on the menu.” This week’s line-up includes my Irish Pot Roast made in the slow cooker. By cooking the roast, low and slow, flavors are allowed to build and the meat becomes super tender and juicy. I’ve paired it with one of my newer recipes, Lemony Asparagus & Pea Pasta Salad. This is suburb salad that makes a great side dish or if you add a bit of chicken or tuna turns into a delicious meal. These two dishes are good enough on their own but I thought we’d start out the meal with an “old school” appetizer. Cream Cheese & Olives with fresh veggies is a surprising dish that wins over people every time it’s served. To finish off our menu, there’s a sweet treat that’s the perfect little bite. Pecan Pie Tart Bites can be whipped up in minutes and disappear quickly. Let’s get cooking!
