Comfort food that’s easy to make is what this week’s menu is all about! Pizza rolls, a zesty salad, ooey gooey cheese sticks and an ice cream dessert are featured this week and will sure have everyone around the family table begging for seconds.
When I put this week’s menu together it was out of total selfishness. I have been burning the candle at both ends, working, planning all the graduation festivities and taking care of the family. With all of that, my “inner self” was crying out for some comfort food. I was not about to deny my cravings but I also DID NOT want to go to a lot of trouble making supper. I took a stroll through my recipes and came up with this menu that satisfies ALL my cravings.
To pull this menu off, all you need are the recipe ingredients and a little planning. Here’s how I do it:
- Make the Three Bean Salad and the Ice Cream Cereal Squares the night before you want to serve them. You could even make the Pizza Rolls and place them in the muffin tin, cover with plastic wrap and store in the fridge. Just take them out to rest on the counter while the oven is coming up to temp.
- While the Pizza Rolls are baking, make the Marinara and bread the cheese sticks. When the Pizza Rolls come out of the oven and are “resting” for a few minutes, pop the cheese sticks in to bake and heat the sauce.
- That’s it! You’re ready to eat.
