Anybody else busy these days? We are rolling fast over here at the Southern Soul home and by the time Wednesday rolls around, more often that not, I have no clue which way is up! That’s why, years ago, I started meal planning. There’s just a level of comfort that comes with knowing what my plan is for getting supper on the table. Some folks might say that planning out your meals on a weekly basis is too much trouble, but I can tell you, it’s quite the opposite. Meal planning, along with a little prep brings much needed organization when it comes to feeding a busy family. Benefits include saving money, eating healthier and having less waste in the kitchen. Now don’t get me wrong, I do like to “fly by the seat of my pants” from time to time, but at meal time, not so much.
This week we’ve got a great menu that has something each member of your family is sure to like. The meatballs are my youngest son’s absolute favorite and they go perfectly with the hashbrown casserole. If you’ve never had asparagus, I hope you’ll try it. Roasting brings out great flavor and it’s super easy to prepare. We are finishing up with beautiful strawberries sweetened with a little sugar and balsamic vinegar.
