I love a good casserole and I love roasted veggies. I also love a really good appetizer and something a little sweet to enjoy at the end of a meal. All these things are happening in Midweek Menu #54! This collection of recipes starts out with a dish that’s a little bit playful with the unexpected combination of tacos and spaghetti in our main dish. This recipe has quickly become a favorite on A Southern Soul and rightly so. It’s uncomplicated, full of flavor, can be made ahead of time and feeds a bunch of hungry folks. I’ve added in a second fun recipe, homemade salsa, that’s sweet from fresh pineapple yet has a bit of spice from jalapeños. Of course, I’ve got to include a veggie and roasting is my go-to cooking method since it’s quick and easy. To finish things off, you just can’t beat candy made in the slow cooker. So, that’s our menu for the week, now, it’s time to get cooking!
