This week, I’ve got an extra special treat for you. The recipes in Midweek Menu #55 were selected by someone very dear to me, my assistant, Kathy. Over the past few days, Kathy and I have spent a couple of nights in the beautiful city of Asheville, NC. We met to have a “mini retreat” and do some work on the Southern Soul site and make plans for the next six months. Kathy takes care of me behind the scenes and does most everything to help our Pinterest account be successful. I don’t know what I’d do with her!
While we were working away yesterday afternoon, I started writing Midweek Menu and thought, “why don’t I get Kathy to put together a menu she’d love to cook and serve to her family.” I posed the question and she jumped at the chance. We had the best time choosing the four recipes for MM#55 and I think she’s come up with a winner. I know you’ll enjoy this menu from one of the members of the Southern Soul family.
