This week’s midweek menu has four recipes that are tried and true. All the dishes are packed with flavors that will give your supper table a little extra spark and kick that middle of the week slump to the curb! When I put together a menu, I try to pick recipes that compliment each other. This includes having different textures, and mix of hot & cold dishes. I also like having a salad in the line-up so that there’s something with bright flavors. I think these no-bake cookies are a great addition this week since they come together in no time and make a great treat for lunch boxes or as an afternoon snack.
This menu has very little actual “cooking” involved which, when time is valuable, means everything. The soup, which is a favorite on A Southern Soul, is made in the slow cooker. The salad can me made the night or morning before you serve it and get better with time. You can whip up the corn bread and have it baking while you set the table. I’m also about planning and making things easy on myself and this is one great menu that does just that!
