This week, I’ve pulled together a menu that if full of southern comfort food. The reason being is that our youngest son just left for collage so it’s just me and Mr. SS from now on. To help us “get over” not having Hunter around, I decided to make us a meal with simple dishes that remind us of all the good things in life. We are going to have to get used to the new way our home works and that’s okay. We’ve raised two great sons and I’m so proud of how they are marching forward in life.
I really like having a little something at the beginning of the meal to snack on while I’m preparing dinner. The week, it’s Jezebel Sauce over cream cheese. This sauce is so good as an appetizer but it’s great as a topping for pork and shrimp. It also makes a great gift around the holidays. Our main dish is Meatloaf Muffins. They cook in half the time as a regular loaf and any leftovers freeze beautifully. Fresh squash is still available at the farmers market so making a casserole was an obvious choice. Of course, to bring everything to a sweet ending, this Blackberry Peach Skillet Pie is just what’s called for. Top it with a scoop of vanilla ice cream for a bit of extra decadence! Now, let’s get cooking!
