There’s a chill in the air and the days are starting to get shorter. Our schedules are loaded and at the end of a busy day, we all want to come home to a “feel good” meal. For me, that also means one that I don’t have to go to a lot of trouble to make. These four recipes on Midweek Menu #68 are make-ahead rock stars and when put together in one meal, everyone around the supper table is sure to be smiling.
The feature of the menu this week is a fresh salad topped with steak. Often, I use leftovers from a previous meal but it’s so easy to grill up a steak in a cast-iron skillet or grill pan. I tend to purchase a larger ribeye or strip steak and divide it between the salads. Blue cheese crumbles takes this salad to a new level. If you’re not a fan of blue cheese, you can substitute cheddar or feta.
Crockpot Potato Soup brings a “comfort food” vibe to the meal. This soup is so simple and is a lifesaver when you need to feed a crowd. I make a big batch every week or so and freeze half for use later.
To round out the meal, Parmesan Cheese Crisps add just the right touch. You can make them while the soup is heating up. Fast, easy and totally delicious! I’m finishing things off with a sweet and savory fall snack mix. It’s great to serve as a dessert and perfect to enjoy while you’re watching your favorite show. Now, let’s get cooking!
