I am so excited about this week’s menu because it holds several of my favorite recipes. Our main dish is a roasted chicken with clementines. This is the perfect time of year for citrus and you are going to be surprised at the lovely, fresh flavor those little tangerines bring to your chicken. I am a big fan of roasting a chicken no matter what time of year it is. During the warmer months, I roast two birds on my outdoor grill. One bird is always enjoyed for supper and the other is used for chicken salad, in tacos or wraps. If you have freezer space, make sure you pick up a whole chicken when they go on sale. Saving money and being prepared are hallmarks of meal planning!
Our other dishes can be prepped or made ahead of time so that you’ve got a little bit of time to relax while your chicken is roasting. Our menu also includes what I think might just become a family favorite dessert – fruit cobbler. Blueberry is Mr. A Southern Soul’s favorite so that’s my go-to but you can use whatever fruit you like. Get creative, friends!
