How is it possible that we’re here at week 70 of Midweek Menu? This is one of my MOST favorite things that I do all week and it seems that you like it too. My goal of getting a delicious supper on the table during a busy week is being met and I’m so happy that you’re on this journey with me.
This week, we’re celebrating this milestone with four easy recipes. The star of the menu is Balsamic Brown Sugar Glazed Pork Roast. This recipe is cooked low and slow in the crock and it’s out of this world delicious. I’ve added Marinated Tomatoes as a salad. This dish brings just the right amount of fresh, bright flavor to the whole meal. For the perfect side dish, it’s Brown Butter Butternut Squash. This seasonal casserole is savory with a bit of richness that goes beautifully with the pork roast. Our dessert is light and fruity. Lemon Blueberry Poke Cake can be made ahead of time and chills in the fridge until ready to serve. Now…let’s get cooking!
