When I put this week’s menu together it was out of total selfishness. This week has been interesting, to say the least. I’ve had issues with my site, which thankfully got take care of with the help of some really talented people.  If that wasn’t enough to stress me out, I came down with a nasty cold that wiped me out for 48 hours. No joke. Like in the bed wiped out.

So today, when I started to feel a bit better, my “inner self” was crying out for some comfort food. I was not about to deny my cravings but I also didn’t want to go to a lot of trouble making supper. I took a stroll through my recipes and came up with this menu that satisfies ALL my cravings. 

This menu is perfect when you’ve got a hankering for comfort food. It’s also easy to make and uses some store-bought short cut to make life easy. Let’s get cooking!
