Midweek Menu #91 is all about taking your mealtime to a whole new level. Even though the recipes are simple and can be served any night of the week, they are special enough for entertaining or even when it’s time to celebrate Mother’s Day!
Every now again, you’ve just got to pull out all the stops and make suppertime extra special. Whether you’re celebrating one of life’s milestones, or need a little TLC during a bad time, food can make things better.
This week, I’ve put together four incredible recipes that stand on their own but when they’re combined into one menu, well, you’ve got a powerfully good thing. The star of the meal is a Low Country Boil. It’s loaded with shrimp, sausage, potatoes, onions, and corn. One of the things I love about serving this dish is that you can make it for a family of 2 or 4 during the week. It’s also a great “party food” recipe since it’s easy to increase the ingredients to feed a crowd. As an added benefit, clean up is a breeze. Since you serve the boil on newspaper, once the meal is over, just roll everything into a bundle and toss in the trash!
