Welcome to Monday…this week holds a sunny promise!  January came strong and blasted it’s way into our lives!  It’s no surprise that in the South we don’t “do” winter weather all that well.  The funny thing is, we are just fine with all the mocking about our driving in snow, school delays, etc. because we actually like how things get a little crazy and we enjoy the slow down.  With life running at warp speed, it was really great that last week we had a couple of days when the boys attended school on a 2 hour delay due to the frigid temperatures.  Our mornings started a little later, moved a little slower & we talked, laughed and shared a little longer.  Now, rolling on into the first month of the year, here’s a couple of things of things I’m liking, made and am working on.

Krispy Treats with Sprinkles
1/4 cup of butter – 1/2 stick
10 oz. of marshmallows
6 cups of cereal – your choice
  • Microwave butter and marshmallows in a glass bowl on high for 1 minute.
  • Stir until mixed well.
  • Mix in cereal.
  • Press into a baking dish (choose size depending on thickness of squares) using wax paper or buttered hands.
  • Cut into squares.
  • Dip into melted white chocolate – melt according to package directions
  • Roll in sprinkles.

A few other things I loved this weekend ~

No Knead Yeast Rolls from my friend, Melissa…they were delicious!

There’s lot’s of organizing, purging and cleaning going on around here.  One of the first places for a face lift is our laundry area.  I am totally, absolutely sure that people come over here and wear our clothes because it never ends!!
Oh, good Glory…just when I think I’m sinking, I look at this quote and things get back on track.

The Inspired Room get’s it right with this post…
Oh yeah, we love the “tater” so this recipe from Bon Appetit is on the menu this week.
And then there’s this…
I love this sign.  My buddy from Alabama, Stacey at Southern Bite posted this and I am so glad he did.  Reminders like this help me stop and reflect on what’s happening in my life. It might just be for that one short moment, but that’s just fine, taking pause in our day to be thankful is all that matters.
I’m counting my blessings ~ It’s going to be a great week, friends….
