Whole wheat, applesauce muffins are tender and soft with loads of flavor so that you'd never know they are healthy!

  • 1/2 cup butter - softened
  • 1/2 cup sugar
  • 2 eggs - room temperature
  • 3/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 and 3/4 cup whole wheat flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/4 cup butter - melted
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  1. Heat oven to 350 degrees.
  2. Using a hand or stand mixer, cream together sugar and butter. Add eggs one at a time, mixing well. Add in applesauce and vanilla, mix.
  3. In a separate bowl, sift together flour, baking powder and salt. Combine dry ingredients with wet and mix until incorporated. Spoon into muffin tin that has been coated with non-stick spray. Bake for 15 minutes (test for doneness with a toothpick inserted into middle of muffin.) Remove muffins from pan and cool.
  4. Mix together sugar and cinnamon. Dip each muffin into melted butter then into cinnamon sugar. Makes 12 muffins.
