Blueberry Sour Cream Muffins with Lemon Glaze

These moist, lemony muffins made with fresh blueberries make a delicious treat.

  • 2 cups baking mix - like Bisquick
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 3/4 teaspoon vanilla
  • zest of one lemon
  • 1 tablespoon baking mix (heaping)
  • 1 cup blueberries (fresh or frozen)
  • 2 cups powdered sugar
  • 2-3 tablespoons fresh squeezed lemon juice
  1. In a bowl, combine baking mix and sugar.
  2. In a separate bowl, combine eggs, sour cream, vanilla and zest.
  3. In a small bowl, gently toss to combine 1 tablespoon of baking mix and blueberries.
  4. Stir wet ingredients into dry just until combined - mixture will be thick.
  5. Gently fold in blueberries.
  6. Fill greased muffin cups three-fourths full. I used paper baking cups.

  7. Bake at 375°F for 18-20 minutes or until a toothpick comes out clean.
  8. Cool on a wire rack.
  9. Mix lemon juice into powdered sugar.
  10. Drizzle glaze over muffins.
