Ingredients

washed baby spinach

cubed watermelon

red onion - thinly sliced

feta cheese

cherry tomatoes
salt and pepper
Dressing
1/4
cup
balsamic vinegar
1/2
cup
extra virgin olive oil

tablespoon
Dijon mustard
1
teaspoon
honey
1
large clove garlic
(grated)

teaspoon
salt
1/4
teaspoon
pepper
Instructions
Place spinach on plates.
Top with remaining ingredients and sprinkle with salt and pepper.
Drizzle with balsamic dressing.
Dressing
Place all ingredients in a small jar and shake to emulsify.
