Lemon Chess Pie
This recipe is a Southern Classic. You can make a regular Chess pie, coconut, chocolate or my favorite, lemon.
- 2 cups sugar
- 4 eggs
- 1/2 cup butter , softened
- 1/4 cup milk
- 1/2 cup fresh lemon juice
- zest of 2 lemons
- 1 Tablespoon flour
- 1 Tablespoon corn meal - I use finely ground white
- 1 prepared or homemade pie crust
Mix all ingredients together and blend well with a whisk or fork. No electric mixer needed.
Pour into a 9 inch pie crust.
Bake in a slow oven at 300 degrees for 1 hour or until golden brown.
