Heat olive oil in a cast-iron skillet or heavy bottom pan, sprinkle chicken with salt and pepper, sear until golden, then place in crock pot.
Add ketchup, soy sauce, honey, garlic, onion powder dried thyme, dried parsley, and mustard to crock pot and cook for 3-5 hours until chicken is done and sauce thickens.
Spoon sauce over chicken, sprinkle with parsley and serve.
