Beer Cheese Dip made in the Crock Pot is creamy, rich, and loaded with ooey-gooey cheese. It's a terrific appetizer for game day, movie night, or when you're entertaining friends. Serve it with pretzels, chips, sausage, and even veggies for a warm, comforting bite that everyone will love.
Add all ingredients to the pot of the Crock Pot. Place lid on the pot and set heat to HIGH and time for 1 hour. Stir ingredients every 10-15 minutes until cheese is melted.
Taste and add more salt or red pepper if needed. Sprinkle on chopped green onion if desired.
Serve warm dip with pretzels, kettle chips, grilled sausages and veggies.

Tips:
The best way to keep the cheese dip from burning is to stir it often. Once the cheese has melted in the crock pot, turning the heat to the "keep warm" setting is best.
My recipe calls for sharp cheddar cheese, but you can easily change it with other shredded cheese. Add Pepper Jack for a bit of spice or smoked Gouda for deep flavor. Mozzarella and Gruyère are also great cheeses for this recipe.
Cooked, crumbled bacon would be outstanding. You could also add in cooked breakfast sausage or seasoned ground beef for a heartier dip.
