Soak bread crumbs in milk until the absorbed – about 8 to 10 minutes. Once bread crumbs are soaked, add them to a large mixing bowl. Add the remaining meatloaf ingredients into the mixing bowl and stir until well incorporated.
Shape the mixture into a loaf on a parchment lined baking pan. Bake the meatloaf for 30 minutes.
While the meatloaf is baking, combine brown sugar and apple cider vinegar in a small sauce pan for the glaze. Stir mixture over a medium low heat for 5 minutes. Add the remaining ingredients for the glaze to the saucepot and stir to combine.
Once the meatloaf has baked for 30 minutes, remove from oven and spread ⅔ of the glaze over the meatloaf. Bake for an additional 10 minutes.
After 10 minutes, remove from oven and add remaining glaze. Bake for another 8-10 minutes or until an instant-read thermometer shows 160 degrees.~Note: for the last 5 to 8 minutes, I turn my oven to broil so that the glaze gets nicely browned on top.
